Description
Harvest : in mid-October, by hand, early in the morning or in the late afternoon, in small boxes placed
before arriving in the cellar, in cold rooms
Fermentation: after de-stemming, the grapes are conveyed into 100 Hl steel fermenters, equipped with a
programmable pumping over system (to obtain maximum results of color extraction and softness of the
wine), and temperature control (26-28 ° C) . Maceration on the skins lasts for about 20-25 days. After
fermentation, the wine is placed in new barriques from various French artisanal tonnellerie for about 18
months. The various types of wine are kept separate until the moment of assembly, which takes place after
a careful selection of the products in barriques.
Sensory examination
Intense, lively and bright ruby
The aromas are deep and persistent and discover precise aromas of fleshy fruit on the nose, blackberries in
particular, together with notes of licorice and graphite. Light balsamic scents complete the aromatic picture
of great complexity and persistence
In the mouth it is austere and elegant, with a strong impact and great gustatory progression, with a firm and
decisive character marked by very fine, soft and round tannins.
