VINEYARD
The vineyards, over fifty years old, are located at about 310 meters above sea level, on a hill facing east, in the highest part of the portion dedicated to our Vecchie Vigne (old vines). Here the Verdicchio grape finds a particularly favourable soil, very deep, loamy and fresh.

HARVEST
The grapes are hand harvested, with great attention to keeping the grapes perfectly intact. It usually takes place between the end of September and the first ten days of October, when the fruits have reached an optimal ripeness.
VINIFICATION
After a light pressing, the free run must is rapidly cooled and then goes through static decantation. The fermentation, in steel tanks at a temperature ranging from 16 to 18°C, lasts for 15-20 days. The wine does not undergo malolactic fermentation.
AGING
18 months in concrete tanks, during which the wine remains in continuous contact with its lees. This is followed by the racking of the must by natural sedimentation into another small stainless-steel container. The wine rests here for about 36 months until bottling, which takes place at least 6 months before being released.
