In the heart of the Marche, where vineyards quilt the landscape, there is an ancient custom of blending the fruits of the cellar with the crafts of the butchery. Our Bacco Salami is steeped in this heritage. The lean pork meat is coarsely ground and then “awakened” by being marinated in Rosso Piceno DOC.
As it cures, the salami absorbs the tannins and the fruity bouquet of the wine, developing a deep, complex aroma and a distinctive slightly purple hue.
