The Marche region, nestled between the Adriatic Sea and the Apennine Mountains, has a centuries-old tradition of “Norcineria” (the art of pork butchery). This box is a curated selection of the most authentic, dry-aged (essiccati) salamis that you would find in a traditional Marche farmhouse.

Each product is a result of the unique microclimate of our valleys, where the cold mountain air allows for a slow, natural maturation that develops deep, complex flavors.

Experience the authentic soul of the Italian Apennines with our Marche Artisanal Charcuterie Collection. This box is a curated sensory journey through the hills of the Marche region, featuring a selection of premium, dry-aged salamis (salami essiccati) crafted using ancient methods passed down through generations.

  • Whole Seasoned Lonza (700-800g): The crown jewel of our mountains. A whole pork loin, salted by hand and dry-aged until it reaches a buttery, delicate consistency.

  • Fresh Vacuum-Packed Lonza (approx. 500g): A premium, non-seasoned cut for the culinary enthusiast. Vacuum-sealed to lock in the tenderness of high-altitude farming, perfect for a traditional roast.

  • Salame Campagnolo (250g): The “Country-style” classic. Medium-grained and sweet, reflecting the simple, honest flavors of our rural farmhouses.

  • Salame Nostrano (250g): A bold, aromatic recipe with a historic spice blend that evokes the scent of ancient Marche cellars.

  • Artisanal Dry-Aged Sausages (3 pieces – approx. 150g total): These “Salsicce Secche” are the soul of the Marche snack. Intensely flavored and firm, they are cured in the crisp mountain breeze to concentrate their savory, peppery notes.

Our commitment to a secure shipping means we never compromise on food safety. During the warmer months, even our most resilient cured meats, such as Salame Fabriano and Dry Sausages, can be affected by extreme transit temperatures.

To guarantee that the products reach your table in perfect condition, we have implemented the following safety protocols for all shipments:

  • Isothermal Containers: We use high-density thermal packaging to maintain a stable internal microclimate, shielding the products from external heat.

  • Eutectic Plates (Cold Packs): Every box is equipped with certified eutectic cooling plates to provide a constant and controlled low temperature throughout the journey.

  • Summer Hiatus: Despite these technologies, we choose to suspend shipping during peak summer (June–September) to eliminate any residual risk from extreme heatwaves.
