Fiocco di prosciutto is obtained from the finest part of Italian pork legs. It is a lean product, with a taste which is sweet and savoury at the same time. It is salted by hand and then left to mature in special cellars for about 9 months. In the same cellars ages its big brother, considered the king of cured meats: culatello.

Before slicing the fiocco, remove the layer lard and rind, but only from the portion you want to use and starting from the thickest part. Cut thin slices and enjoy fiocco di prosciutto with bread and a curl of butter. Also, you should try it accompanied by some flakes of Parmigiano Reggiano PDO.

Description

The Fiocco di Prosciutto (often called Fiocchetto) represents the pinnacle of Italian norcineria. Deeply rooted in the culinary heritage of the Marche region, this charcuterie masterpiece combines artisanal expertise with a clean, allergen-free profile, making it perfectly suited for today’s demanding international markets.

Fiocco is obtained from the hind leg of select, heavy Italian pigs. When a pork leg is carved, the largest and most marbled section is destined for Culatello (the “King” of cured meats). The smaller, leaner, and more muscular side portion is meticulously trimmed to become the Fiocco.

🧂 Artisanal Processing: The meat is strictly salted by hand using pure sea salt and a proprietary blend of natural spices. It is then encased in a natural bladder and tightly bound by hand with twine, giving it its characteristic pear shape.

⏳ The Microclimate & Cellar Aging: The Fiocco is left to mature slowly for approximately 9 months. It ages in historical, humid brick cellars alongside its “big brother,” Culatello. This specific microclimate allows beneficial molds to develop, giving the meat its unique aromatic depth.

Our Standard: This Fiocco uses exclusively solid muscle and natural air-drying. It is 100% Gluten-Free, making it entirely safe for individuals with Celiac Disease or Non-Celiac Gluten Sensitivity.

Naturally Lactose-Free

The Technical Reality: In mass-produced charcuterie, lactose and milk derivatives are frequently added as fermentation sugars for starters or to artificially weight the product with water.

Our Standard: The preservation relies solely on the ancestral combination of dehydration, salt, and temperature control. It contains zero milk proteins and zero lactose, making it ideal for lactose-intolerant consumers or those with dairy allergies.
